Tomato Mascarpone Pasta with Garlic Butter Chicken

If you’re after a cosy, comforting pasta that still feels easy enough for a weeknight, this one’s for you. Creamy tomato mascarpone sauce, garlicky butter brushed chicken all on a bed of pasta. One of my favourites to make when you fancy something a little indulgent tasting without spending ages cooking.

Turn cooking mode on

Step 1

Start by bringing a large pan of well salted water to the boil and cooking the pasta according to packet instructions. Before draining, reserve a mug of the pasta cooking water, then drain and set aside.

Notes

Easy calorie reductions: Reduce mascarpone to 40g; use 10g parmesan instead of 15g and use reduced-fat cream cheese instead of mascarpone. Whilst this is a mascarpone based recipe, you can use cream cheese or reduced fat creme fraiche if you prefer. For speed: You can dice the chicken and toss it in the garlic and butter directly in the pan, set aside and toss with the pasta at the end.
