Make sure to use thick Greek yoghurt such as Fage over Greek style yoghurts, these hold too much moisture and make the dough very sticky to work with. When combining your ingredients, if the dough is too sticky, add a touch of flour, equally if its dry add a touch of yoghurt. If your pizza base is soft underneath, it’s usually down to oven temperature or moisture. Make sure your oven is fully preheated to around 200°C fan before baking. If it’s still not crisping, carefully slide the pizza directly onto the oven shelf for the final few minutes. If the centre feels slightly doughy, it may need a little longer in the oven or your base may be rolled too thick, so aim for a thinner middle and slightly thicker crust. Turkey bacon can be used instead of bacon medallions. If you prefer a stronger smoky flavour, add 1 tsp chipotle paste to the BBQ sauce before spreading it on the pizza. You can also swap the chicken for BBQ pulled chicken if you have leftovers to use up.
