Notes

For a lighter version, leave out the bacon and skip the garlic butter on the brioche buns, simply toasting them instead. You could also use bacon medallions in place of streaky bacon or swap the brioche buns for lighter burger buns if preferred.

Notes:
Chicken mince: slightly damp hands make the patties much easier to shape without sticking.

Peri sauce: adjust the amount of peri peri sauce depending on how spicy you like it.

Sauce consistency: keep the sauce fairly loose so it's easy to dip into. If it thickens too much, simply add a splash of hot water.

Peri mayo: Use shop bought peri mayonnaise if preferred.
