Hi Sarah! Yes, it's possible to meal prep this for work. I advise cooking all components separately: potatoes and sausages work well after a reheat, but I'd suggest making the scrambled eggs fresh, or reheating gently with a splash of milk to avoid rubberiness. Keep everything refrigerated for up to 3 days. Hope it's a hit! x

Really great breakfast for a family as it’s so easy to tweak for individual preferences. We ended up with 4 different variations to accommodate those that don’t like eggs, beans or sausage and one for the person that likes everything and needs the extra calories!
