Breakfast Loaded Potatoes

Crispy potatoes loaded with chicken sausages, creamy scrambled eggs, and warm beans and finished with a sprinkle of cheese. A proper filling, high protein breakfast to set you up for the day. I've also popped how to meal prep these ahead of time.

Notes

You can use pork sausage if you prefer or even bacon medallions and cut them into chunks. Swap for a fried egg or poached egg over scrambled eggs and if you don't like beans, you can use chopped tomatoes.

Not my fave with the potato seasoning but filling and good protein. Easy to make so may try a different flavour on the potatoes next time

Appreciate the feedback, Simone! For a different twist, you could try cajun or Italian herbs for a new flavor. Hope the next experiment hits the spot!

Would this be ok to do as meal prep for work? I’ve never heated egg back up before so not sure what it’s like x

Hi Sarah! Yes, it's possible to meal prep this for work. I advise cooking all components separately: potatoes and sausages work well after a reheat, but I'd suggest making the scrambled eggs fresh, or reheating gently with a splash of milk to avoid rubberiness. Keep everything refrigerated for up to 3 days. Hope it's a hit! x

Really great breakfast for a family as it’s so easy to tweak for individual preferences. We ended up with 4 different variations to accommodate those that don’t like eggs, beans or sausage and one for the person that likes everything and needs the extra calories!

Added spinach to the scrambled egg for more nutrients and lean sausages rather than chicken.
