Notes

It’s very easy to forget to cook rice a day before you plan a recipe. If you forget or you’re short on time, you can use this microwave rice hack. Use plain microwave rice and heat it slightly under time, around 30-40 seconds less than the packet states. Tip it straight out onto a plate or tray.Fluff with a fork and leave for 10 minutes at room temp (or 3-5 minutes in the fridge). This lets the surface moisture evaporate, giving that slightly dry, separate grain texture you need for frying.
