Optional add ins: For extra depth 1 tbsp tomato purée stirred in with the fajita seasoning adds richness and a slightly more tomato-forward sauce. ½ tsp smoked paprika boosts the smoky flavour, especially if your fajita mix is mild. Garlicky upgrade 1 tsp chopped garlic or ½ tsp garlic granules added with the seasoning for extra savouriness. Fresh finish A squeeze of lime juice at the end lifts the creaminess and balances the richness. Heat lovers Chilli flakes or a dash of hot sauce stirred through at the end. Sauce adjustment If you prefer it looser or saucier, add an extra splash of reserved pasta water before serving. Subs: This recipe is really flexible. You can swap the chicken breast for chicken thighs, chicken sausages (sliced) or chicken mince just cook until properly golden and cooked through before continuing. Feel free to add extra veg such as mushrooms or courgette alongside the peppers to bulk it out using what you’ve got. If you don’t have cream cheese, you can use single cream or crème fraîche instead, use the same amount (around 80–100ml) and reduce the pasta water slightly, adding it gradually until the sauce coats everything nicely.
