Cajun BBQ Chicken, Bacon & Sweet Potato

This recipe really hits the spot and it's under 500 cals a portion! Sweet potato chunks are tossed with Cajun seasoned chicken, peppers and onion that's all tossed in BBQ sauce. Topped with melted cheddar and crispy bits of bacon for a easy dinner the whole family can enjoy.

Notes

I always use frozen sweet potato as its already cut plus it tends to cooker quicker than normal potatoes but of course you can use any. Ranch sauce is also a delicious alternative to drizzle all over the top if you want or even to throw over a crispy salad on the side.
