Swap halloumi for extra-firm tofu if you want a dairy-free option pan-fry until golden before adding the chipotle paste. Red cabbage can be swapped for white cabbage or sliced red onion alone if that’s what you have. Alternatively, roasted red peppers and onions are delicious along with slaw. If you don’t have hummus, a small spoon of fat-free Greek-style yoghurt works as a lighter alternative.

This was phenomenal. Added a wee half flatbread mainly because it needed used up but was great for scooping and mopping up the leftover hummus. The slaw Ieft soaking for hours and it was delicious.
