Notes

Microwaving the potatoes first isn’t essential, but it cuts down the overall cooking time and helps keep the centres fluffy. Large floury potatoes work best for this (such as Maris Piper or King Edward), but any baking-style potato will work just adjust cooking time if they’re smaller. These are also banging with leftover gammon!
