Paprika Chicken & Chorizo Skewers

Paprika smoked chicken, threaded with chorizo, peppers and onions with a garlic aioli sauce for dipping. This is one of my go to high protein lunches that stores well in the fridge. The leftover veggies are tossed with courgette to add some volume.

Step 1

Add the chicken to a bowl. Season with the garlic granules, smoked paprika and oregano, before adding the tomato puree and lemon juice. Give it a good stir to ensure the chicken is fully coated.

This is a recipe you can eat cold. You can pack it up in a box as it is or remove the chicken from the skewers once cooked. You could bulk it out further with some cherry tomatoes or lettuce, I like butterhead or watercress salad with this recipe as it matches the veggies.
