For a higher protein boost, swap the pork sausages for chicken. You can also serve this with some thick beef gravy if you want to make it super cosy. To reduce the calories, use one fewer sausage (5 instead of 6). You can also reduce the cheese to 20–30g, or leave it out altogether. Adding extra carrots or onion helps keep the tray generous and filling without adding many calories. For an even lazier traybake, if you prefer not to microwave the potatoes, add them straight to the tray, season well and roast for 20 minutes to get them started. Then add the sausages and carrots and continue with the recipe as written. This will take longer though.
