Honey Thyme Sausage, Onion & Carrot Smashed Potato Traybake

This traybake is proper low-faff comfort food. Crispy smashed potatoes are roasted alongside sausages and vegetables, then finished with a light honey and thyme drizzle for a touch of sweetness. It’s simple, cosy, and ideal for when you want something hearty with minimal effort and washing up.

Step 1

Start by adding the baby potatoes to a microwave-safe bowl. Cover loosely and microwave on high for 8-10 minutes, until just tender but not falling apart. Drain off any moisture and allow them to steam dry for a minute.

Notes

For a higher protein boost, swap the pork sausages for chicken. You can also serve this with some thick beef gravy if you want to make it super cosy. To reduce the calories, use one fewer sausage (5 instead of 6). You can also reduce the cheese to 20–30g, or leave it out altogether. Adding extra carrots or onion helps keep the tray generous and filling without adding many calories. For an even lazier traybake, if you prefer not to microwave the potatoes, add them straight to the tray, season well and roast for 20 minutes to get them started. Then add the sausages and carrots and continue with the recipe as written. This will take longer though.

Just cooked this for the first time, very tasty, I think we'll add another carrot next time and maybe a leek
