Slow Cooked Beef & Red Wine Pasta

Notes

Is red wine essential? No but it does add a gorgeous richness and depth to the sauce that’s hard to replicate. If you prefer to skip it, just replace the wine with the same amount of extra beef stock plus 1 tbsp balsamic vinegar. You’ll still get that subtle tang and depth without using alcohol. Beef cut used: I used lean diced beef which works great in this recipe as it still goes tender when slow-cooked. If you want an even richer, falling-apart texture, you could also use diced braising steak, shin, or chuck they have more connective tissue and break down beautifully after a few hours in the cooker. For added veggies, you can add sliced mushrooms or some chopped spinach. Calories per portion for just the beef: 257 l Protein: 33.12g l Fat: 7.6g l Carbs: 8g

This is incredible! I was feeling super lazy so seared the beef then threw everything else into the slowcooker for a good 7 hours or so and it was amazing. I pulled all the beef out then put the sauce etc into a pan on the hob and thickened and adjusted the taste Such a beautiful meal
