I don’t know about you, but anything with sausage and mash combined is ultimate comfort food. This bake has a base made up of sweet caramelised onions, tossed with carrots and thyme before its tossed with chopped sausage. Baked with creamy mash and plenty of cheese, it’s truly what dreams are made of.

Yes Rebecca, definitely! Make it ahead by preparing both the mash and sausage filling. Assemble, then keep it in the fridge for up to 48 hours. Reheat in a preheated oven until piping hot before serving or enjoy cold straight from the fridge if you're too excited to dive in! X
