If you can’t find brisket, diced beef or braising steak works well. Chipotle paste can be adjusted to taste, or swapped for smoked chilli paste or smoked paprika plus a pinch of chilli flakes for less heat. Pappardelle can be replaced with tagliatelle or linguine.
