Notes

For a crisp pasta salad, it is important that the pasta and chicken have cooled. If meal prepping ahead of time, I would suggest assembling with lettuce no more than a day ahead to prevent browning and ideally keep sauce separate. If unable to, layer so that the sauce sits on top.

Delicious salad. I used sweetcorn instead of red pepper. And I think I could have loosened the sauce up. But delicious!!

Great idea using sweetcorn, Sheree! If the sauce felt a bit thick, try adding a bit of hot water in small increments until you reach your preferred consistency.
