Chicken French Onion Orzo

This is the ultimate cosy dinner at home. Sweet caramelised onions are tossed in a creamy, cheesy orzo topped with bites of chicken for added protein. If you’re feeling extra indulgent, you can top with more cheese and turn it into a bake.

Heat a large deep frying pan with spray oil and add the butter. Once the butter has melted, add the sliced onions along with the sugar and salt. Cook slowly for around 15-20 minutes, stirring often, until soft, golden and caramelised. If they start to catch, add a splash of water.

Notes

You can stir through some spinach or even mushrooms for added veggies. You can cook the chicken in the same pan first, then remove and carry on with the onions to save washing up or keep it separate and toss together at the end so the chicken stays warm and fresh. If you aren't a fan of orzo, just swap to normal pasta.
