One Pan Mango Chutney Chicken & Potato

This is a cosy, low-faff dinner that’s so easy to make but tastes absolutely banging. Chicken is gently spiced with mild curry powder, then simmered with mango chutney and potatoes until everything’s glossy and spoonable. It’s the kind of easy, one-pan meal that’s ideal for busy weeknights and fits perfectly into a budget friendly week.

Notes

Using potatoes instead of rice keeps this recipe in line with the rest of the low-faff bangers meal plan week and avoids adding extra ingredients to the shop. Chicken thighs work well if you prefer juicier meat. If you like a bit of heat, add a pinch of chilli flakes with the curry powder. For a lighter option, bulk it out with extra peppers or onion and reduce the potato quantity slightly. If you’re feeling extra indulgent, you can sprinkle over some cheese or add some dollops of Greek yoghurt.

Such a delicious and easy one-pan recipe! This meal is perfectly balanced – sweet, savory, and full of flavor. I also loved Sarah’s idea to add peas and immediately included them – such a great addition! 🥭🍗✨

Wasn’t expecting as much juice as we got, but it was delicious with this extra sauciness, and the petit poi’s added an extra texture and sweetness (my daughter loves peas!) Will definitely be making this one again!

Adding chilli flakes sounds like a fab idea! You can adjust the potatoes to suit your flavor blend; just reduce the amount in step 1 and carry on with the same process. Happy cooking!
