Notes

Using potatoes instead of rice keeps this recipe in line with the rest of the low-faff bangers meal plan week and avoids adding extra ingredients to the shop. Chicken thighs work well if you prefer juicier meat. If you like a bit of heat, add a pinch of chilli flakes with the curry powder. For a lighter option, bulk it out with extra peppers or onion and reduce the potato quantity slightly. If you’re feeling extra indulgent, you can sprinkle over some cheese or add some dollops of Greek yoghurt.
