For a lighter version, swap streaky bacon for reduced fat bacon medallions and use reduced fat cheddar only, skipping the mozzarella. For a lower carb option, serve the pulled chicken over half potato and half cauliflower mash, or all cauliflower mash. Unsweetened almond milk works well in the mash, and light soft cheese can be used in place of butter for a creamy finish with lower fat.

Delicious. I did the chicken in the slow cooker coz I’m lazy 😂. I’ll try the original method next time as the slow cooker slightly watered down the sauce.
