You can add in some grated cheese if you want some extra indulgence. Pop some sesame or poppy seeds on the top after glazing with egg for added crunch. Swap the thyme for dried sage for a different herb flavour. You can use any chutney you like, cranberry sauce or even some hot honey folded into the sausage for a different flavour. Make sure to pat the chicken mince and bacon dry before folding through the caramelised onion chutney. You can also preheat the baking tray before adding the sausage rolls to encourage the bottoms to heat up quicker.

Had a bit of diaster that Morrison subbed my 5% meat for 20% and I only ordered one roll of pastry 🫣 but they were so nice. I added a little more chutney. Presentation needs work 😂
