Broccoli Cheddar Soup with Homemade Croutons

This soup is the definition of a hug in a bowl. It’s a rich, savoury and cheesy soup but still light enough for a weekday lunch. Topped with homemade garlic croutons and crispy bacon for added flavour. I've also listed some swaps in the ingredients for a veggie version.

Notes

For extra depth, you can cook the bacon first in the same pan, remove it, and use the small amount of rendered fat instead of oil when cooking the onions. It adds rich, smoky flavour to the soup base. Making the croutons and bacon near the end keeps them warm and crisp. Cream cheese adds body without needing cream, but if you want more of a creamy soup, you can omit the milk and cream cheese and swap for single cream. You can top with some cooked chicken for extra protein.
