For extra depth, you can cook the bacon first in the same pan, remove it, and use the small amount of rendered fat instead of oil when cooking the onions. It adds rich, smoky flavour to the soup base. Making the croutons and bacon near the end keeps them warm and crisp. Cream cheese adds body without needing cream, but if you want more of a creamy soup, you can omit the milk and cream cheese and swap for single cream. You can top with some cooked chicken for extra protein.

Lunch prepped with chicken and bacon...no croutons as i wasn't sure how they would reheat in a microwave. Absolutely delish! Planned to make it again next week!
