Notes

You can swap the mini hash brown bites for 2 larger hash browns, cut into chunks. Any reduced fat pork sausages will work here, or use chicken sausages for a slightly lighter/ high protein option. Bacon medallions can be replaced with back bacon if preferred. If you don’t have Picobella tomatoes, regular cherry tomatoes are fine. Reduced sugar baked beans help keep calories lower, but standard beans will do!
