Can sub for mexican cheese or more cheddar.

Make sure to use a large enough dish where the rice is spread out and still under the stock mixture. Additionally, make sure when the bake is wrapped with foil it is wrapped tightly where no steam can escape.

Wow this is AMAZING! Prepped it the night before as i work nights so my partner could put it in the oven, he went a bit rouge and added chorizo but still tasted amazing! Re-heats well and have the leftovers tonight! Definitely a hit and would 1000% make again!

This looks awful but oh my it tasted so good! I love how effortless this was to make, even my 2yr old enjoyed it & he’s a fussy lad! 😂 I added onion & yellow pepper instead of the courgette & drizzled ranch sauce over it 🤤
