Lasagne Inspired Gnocchi Bake

This one is proper comfort food. Think all the flavours of a lasagne, but way less faff. Using gnocchi instead of pasta sheets and a white sauce made from garlic herb cream cheese rather than a roux. It’s the kind of dinner that feels indulgent, works brilliantly for batch cooking and always goes down a treat.

Notes

To help prevent the cream cheese from splitting, make sure both the milk and cream cheese are at room temperature or gently warmed before mixing. For an extra smooth finish, you can also stir 1-2 tbsp of the hot sauce into the cream cheese mixture before adding it to the bake. Fresh gnocchi works best: this recipe is written for fresh, chilled gnocchi, which cooks through perfectly in the oven. If you use cupboard gnocchi, par boil it in salted water for 1-2 minutes, drain well, then add to the sauce as instructed. This stops it from staying dense or gummy. Sauce consistency: Make sure the sauce is thick but still saucy before adding the gnocchi too dry and it won’t cook properly, too loose and the bake won’t set. Cheese swaps: You can use a mix of mozzarella and a little parmesan to reduce cals and increase flavour. | Veg boost: Finely chopped mushrooms or courgette can be added to the soffritto if you want extra veg without changing the flavour much.
