Turn cooking mode on

Step 1

Start by adding the sweet potatoes to a large pan and covering them with cold, well-salted water. Bring to the boil, then reduce to a steady simmer and cook for 15-18 minutes, until just tender. Drain thoroughly, then return them to the hot pan and leave to steam dry for 1-2 minutes.

Notes

Protein swaps
Beef mince - can be swapped with turkey mince or chicken mince (add an extra splash of water as they’re leaner)
Make it veggie by using soya mince or lentils and swapping the beef stock cube for veg stock

Heat level
Mild: reduce chilli powder to a pinch and skip the chipotle
Spicy: add extra chipotle paste or a pinch of chilli flakes

Sweet potato mash
You can swap half the sweet potato for regular potatoes if you want a slightly lower carb mash, alternatively, you can swap to normal potatoes. Make sure to mash while hot and let steam dry properly for the fluffiest texture

Flavour boosters
Coffee, cocoa or dark chocolate all work you won’t taste them, they just deepen the chilli flavour.

Cheese swaps
Reduced-fat mozzarella works if you want stretch rather than sharpness

I am not normally a chilli con carne girl but this, with the sweet potato, was actually sooo good! I think the sweet potato mash helps balance the meal and the cheese is a nice added bonus 😂 soo nice!

No picture as I was too busy eating it! This chilli recipe is the best one I’ve ever made, will defo be a staple chilli recipe from now on! So much flavour, I left it simmering for around an hour and it was perfect. Loved it with the sweet potato mash too
