Start by adding the sweet potatoes to a large pan and covering them with cold, well-salted water. Bring to the boil, then reduce to a steady simmer and cook for 15-18 minutes, until just tender. Drain thoroughly, then return them to the hot pan and leave to steam dry for 1-2 minutes.

Protein swaps Beef mince - can be swapped with turkey mince or chicken mince (add an extra splash of water as they’re leaner) Make it veggie by using soya mince or lentils and swapping the beef stock cube for veg stock Heat level Mild: reduce chilli powder to a pinch and skip the chipotle Spicy: add extra chipotle paste or a pinch of chilli flakes Sweet potato mash You can swap half the sweet potato for regular potatoes if you want a slightly lower carb mash, alternatively, you can swap to normal potatoes.
