Roast Chicken Dinner

This is my 'lighter' take on the classic roast dinner. It's got juicy garlic butter roast chicken, sticky honey soy carrots and parsnips, creamy mash, crisp broccoli and homemade Yorkshire puddings to finish it off.

Turn cooking mode on

Step 1

Preheat the oven to 200°C (fan) or 220°C (conventional). Spray two holes of a muffin tin with oil and place in the oven to heat for the Yorkshire puddings.

Notes

I wanted to make sure this still had gorgeous trimmings whilst making it lighter. You can omit the mash and swap for some boiled potatoes or a couple of frozen roasties if you prefer. Yorkshire puddings = 73 calories per portion, 4.3g protein, 2.4g fat, 8.45g carbs Honey soy veg = 128 calories per portion, 1.9g protein, 2.2g fat, 24.1g carbs
