Thai Red Chicken Dump and Bake Rice

Another one of my favourite dump and bake recipes. Long grain rice baked in a creamy, fragrant red curry sauce, topped with juicy chicken and veggies that roast to perfection. It’s minimal effort just combine, cover, bake, and enjoy a banging, cosy dinner. Plus, it’s amazing for meal prep!

Start by preheating the oven to 200°C (fan) / 220°C (conventional) and lightly oiling a large baking dish (I use a 41cm roaster).

Yes, Lisa, cook on low for 3–4 hours or till the rice absorbs well. Make sure it's mixed well but settling evenly on the water line xxx.
