Notes

You can use low-cal cooking spray, but I prefer a little neutral oil for that super-crispy coating. For a leaner option, use just the egg white instead of a whole egg and reduce the cornflour by 10 g, lightly dusting the beef before cooking. If your beef strips are quite thick, slice them thinner so they crisp up evenly. You can also crack the egg straight into the beef instead of dipping separately if you prefer less fuss.
