If you don’t have Balti paste to hand, you can still make this recipe by boosting the dry spices. Simply add an extra teaspoon each of cumin and coriander, plus a little more garlic, ginger, and tomato purée for depth. Spice levels are flexible too. The paste brings warmth without being overpowering, but you can turn up the heat with fresh chillies or a pinch of chilli powder, or keep it mild by using less paste. As with most slow cooker curries, the consistency can vary depending on your vegetables and cooker. If the sauce looks too thick, stir in a splash of water or stock; if it’s too thin, leave the lid off for the last 20 minutes to let it reduce.

Tasted amazing, even have leftovers for tomorrow (will add rice tomorrow) taste 1000% better than a jar of balti sauce and also didn’t have the paste and added the extra hebs as directed 🤤🤤

Easy to make - throw everything in and leave it to cook! Had this with a low fat mini naan instead of rice and put the other portions in the freezer for another day.

Forgot to take a picture when I made this but it was so good that I froze portions for future so a picture of a frozen portion will have to do! It was the MOST delicious curries I’ve had! Definitely will be making this on repeat!

More meal prepping for the week. Makes life easier as I work 12 hour shifts and my partner doesn’t but takes our dog out when he’s home. Cooking ahead and freezing like this makes our life’s easier so we can eat good tasty home cooked food in minutes. I always double the recipe and cook for 4 rather than 2 so we have a portion for another week.
