Step 1
Start by melting the butter in a large saucepan over medium heat. Once melted, add the leek and onion and cook for 5-6 minutes until softened.
You can use single cream or omit for a lighter option. If freezing using dairy cream and not Elmea, you may want to freeze before adding the cream and add this fresh to prevent the sauce splitting upon defrosting and reheating. I stir through some chicken to up the protein, but you can leave it out if you don't fancy it.
