Creamy Chicken, Leek & Potato Soup

A cosy bowl of creamy soup made with tender leek, onion, and potato simmer with chicken stock, finished with a splash of cream and a little cheese for richness. I love to serve with some crusty bread to soak it all up.

Notes

You can use single cream or omit for a lighter option. If freezing using dairy cream and not Elmea, you may want to freeze before adding the cream and add this fresh to prevent the sauce splitting upon defrosting and reheating. I stir through some chicken to up the protein, but you can leave it out if you don't fancy it.
