Step 1

First, add the cubes of potato to the airfryer basket. Season with a tsp of bbq seasoning and dried parsley. Rub in thoroughly before air frying for 20 minutes at 190 degrees celsius shaking throughout.

Notes

You can pack these potatoes with more veggies if you want to bulk them out further, add more coloured peppers, courgette pairs well or even sweetcorn! If planning to meal prep ahead of time, I recommend keeping the potatoes separate to the chicken mix. Top the chicken mix with the cheese and melt when you reheat. This would keep in the fridge for up to 4 days. To reheat, simply pop in the microwave for a couple of minutes until piping. If needed add a dash of water to the chicken mix to loosen. Always store in an airtight container ensuring the filling is completely cool before popping in the fridge.
