These creamy chipotle salmon bites are the kind of dinner that tastes far more indulgent than it actually is. Start by preheating the oven to 200°C fan/ 220°C conventional. Alternatively, preheat the airfryer to the same temperature. Bring the rice to boil and cook according to packet instructions.

Notes

Subs: Other fish: Cod, haddock or pollock all work well. Cut into chunks and cook for 9-11 minutes (oven or air fryer) until just cooked through. Chicken: Diced chicken breast can be used instead. Season as directed and cook for 12-15 minutes until cooked through, with no pink remaining. Spice level: Reduce the chipotle paste if you prefer it milder, or add extra for more heat.
