Turn cooking mode on

Step 1

Start by heating a large, deep non-stick pan over a medium–high heat and spraying lightly with oil. Add the diced chicken, season well with salt and black pepper, and cook for 5-6 minutes until lightly golden on the outside. The chicken doesn’t need to be fully cooked through at this stage. Remove from the pan and set aside.

Notes

If using dried (cupboard) lasagne sheets
Dried lasagne sheets need a little more liquid and time to soften properly. Break the sheets into smaller pieces so they cook evenly and you may need to add an extra 100-150ml hot water or stock to the pan. Increase the simmer time to 15 minutes or more, stirring once or twice to prevent sticking ensuring you keep the pan covered so the pasta steams as well as simmers. If the sauce thickens too quickly, simply add a splash more hot water and stir.
