Shakshuka

One of my all time favourites for a Saturday brunch. Eggs nestled in a bed of gently spiced tomato and peppers, best served with crusty bread or toasted sourdough for a delicious meal. Add some chicken sausages on the side to up the protein.

Notes

Add a tbsp harissa paste to the sauce to add extra flavour and warmth I like to use toasted sourdough to dip into the eggs and scoop up the tomato. You can add crumbled feta cheese on top, stir through chopped spinach for added nutrients and even top with sliced avocado
