Creamy Tomato Prawn Curry

This is one of those dinners that makes you wonder why you’d ever order a takeaway. Juicy king prawns cooked in a rich, creamy tomato curry sauce with warming spices, spooned over fluffy rice and finished with fresh coriander. Comforting, cosy and ready in under 30 minutes.

Notes

Don’t overcook the prawns once they turn pink and opaque, they’re done. Any longer and they’ll go rubbery. Blitzing the sauce is optional, but it does make it feel more takeaway style. This curry is perfect with naan or roti if you want to switch things up from rice.

Gorgeous added some paneer with the prawns as had some left from the tikka wrap . The paneer was lovely in the sauce so would make a good alternative for a vegetarian
