Cheesy Peri Chicken and Chorizo Rice

One of my favourite recipes to make ahead of time. It's quick, easy and full of flavour. Peri seasoned chicken, crispy pieces of chorizo, a peri tomato sauce infused with the rice, topped with gooey cheese and peri mayonnaise.

Notes

To meal prep - divide the rice into meal prep containers. Let cool to room temperature before sealing and refrigerating. This meal can be stored in the fridge for up to 4 days or in the freezer for up to 3 months. If freezing, thaw in the fridge overnight, then reheat in a microwave or in a pan until hot. You can add a splash of water or stock when reheating the rice to prevent dryness.
