Notes

Fish sauce - I do love to add this for extra flavour, but if you must you can leave it out Jasmine rice - adds to the fragrant flavours. If you don't like to use boil in the bag, swap for the same amount in a usual packet. Rather than rice you can serve this with noodles instead I usually like the thai crackers you can buy from supermarkets to go with this to add extra spice. Meal prepping - Store in the fridge for 3-4 days. You can also freeze the curry for up to a month—just store the curry and rice separately to keep the texture of the rice intact. Ensure it is stored in an airtight container and that is completely cool before refrigerating.
