This is one of those easy dinners that just hit the spot. It's got all of the flavours of the Philly Cheesesteak but loaded on top of rice with a cheesy sauce, finished with crispy onions and a few jalapeños, but you can customise and add whatever toppings you fancy.

Rinse the rice under cold water. Place in a saucepan with the water or stock and a pinch of salt. Bring to the boil, then cover and cook according to packet instructions. Remove from the heat and leave to rest for 5 minutes.

You can use Mexican flavoured microwave rice if you need a quicker midweek dinner! For a less faff 2 minute cheese sauce, you can also just melt together 2 cheesy slices with a dash of milk in the microwave.
