Notes

The longer you boil them for the longer they 'disintegrate' so if you don't like as many crispy bits keep a firm eye on your cooking time whilst they are on the hob. To speed up the drying process, you can carefully pop the potatoes on a clean kitchen towel and dab dry. For even crispier chips, when seasoning with cajun seasoning, you can add a tsp of cornflour too.
