Baked Frittata Style Breakfast Burritos

These baked frittata style breakfast burritos are perfect for make ahead mornings when you want something filling and satisfying. The sausage, pepper and onion bake into a soft but sliceable frittata, while blitzing the eggs with cottage cheese keeps everything light, fluffy and packed with protein (although you can swap to Greek yoghurt if you prefer). Once baked, you can wrap them up, stash them in the fridge or freezer, and reheat straight from cold or frozen.

Notes

Once the cottage cheese is blitzed, you cannot taste it. However, if you prefer you can swap it for thick Greek yoghurt or low fat cream cheese. If leaving it out entirely, add one extra egg the texture will be slightly firmer but still works well for burritos. If using egg whites from whole eggs, leftover yolks can be used in scrambled eggs, pasta sauces, or frozen with a pinch of salt for up to 3 months for later use. Flavour additions Spicy: add chilli flakes or a little chipotle paste to the egg mix. Mexican style: swap smoked paprika for cumin and add jalapeños. Mediterranean: Add sun-dried tomatoes and swap cheddar for light feta or mozzarella. Sauce ideas Sriracha or sriracha mayo for heat. Chipotle yoghurt or chipotle mayo for a smoky kick. Garlic & herb yoghurt for something lighter. BBQ sauce or tomato ketchup also work well!
