This recipe can be meal prepped ahead of time. Ensure it is completely cool before storing in an airtight container and popping in the refrigerator for up to 3 days. Keep the chicken and potatoes separate in the container. When ready to eat, simply pop in the microwave for a couple of minutes until piping hot. If needed, add a tbsp of water to loosen the sauce back up. If you can't find lean diced bacon, use bacon medallions and chop them into small pieces.

Super tasty. Used double cream instead of reduced & the peri sauce didn’t come on the food shop to add to the sauce but still delish. Used 650g chicken instead of the recommended 400g. Made for 4. Next time will double up for batch cooking!
