Slow Cooker Chicken Tikka Rice

This is one of my favourite recipes to cook in a slow cooker. It's easy, minimal effort but packed with flavour and it's perfect for storing in the fridge for meal prep for a grab and go dinner. I've listed instructions below for how to cook on the hob if you don't have a slow cooker for a one pot meal. The recipe below is based on 4 portions, but if you prefer a larger portion this would make 3 big portions. I've listed the macros for 3 in the notes.

Notes

This recipe is based off normal basmati rice, if you use easy cook basmati rice: Easy cook basmati: cook on high for 30- 40 min or on low for 45-60 min Easy cook basmati is parboiled which makes the grains harder. This means it takes longer in slow cooker or one pot recipes to fully absorb liquid and flavour. Once you add the rice, do keep an eye on it as it can turn mushy/overly cooked very quickly in the slow cooker. If you opt for serving 3: Calories per portion (3 servings): 598 kcal | Protein: 44.8g | Fat: 16.9g | Carbs: 65.7g

Meal prepping today and made the curry sauce ready for the rice on the day. Got a bit carried away and added the full tin of coconut milk in by accident so doubled up the rest of the sauce ingredients. So it’s a very saucy curry with an extra tub of tikka sauce to add to chicken or make loaded fries with one day.
