Slow Cooker Chicken Tikka Rice

This is one of my favourite recipes to cook in a slow cooker. It's easy, minimal effort but packed with flavour and it's perfect for storing in the fridge for meal prep for a grab and go dinner. I've listed instructions below for how to cook on the hob if you don't have a slow cooker for a one pot meal. The recipe below is based on 4 portions, but if you prefer a larger portion this would make 3 big portions. I've listed the macros for 3 in the notes.

Meal prepping today and made the curry sauce ready for the rice on the day. Got a bit carried away and added the full tin of coconut milk in by accident so doubled up the rest of the sauce ingredients. So it’s a very saucy curry with an extra tub of tikka sauce to add to chicken or make loaded fries with one day.

Substituted the coconut for more passta was a little bit watery as didn’t mix in the rice but would make again, would probably substitute for greek yoghurt

Can someone help I tried this today had it in slow cooker all day today and added the rice but the rice would not soften or soak up the sauce, I bought normal Tesco rice not easy cook 😅
