Notes

Cooked chicken can be used instead of turkey if that’s what you have leftover. If you don’t have pigs in blankets, use chopped cooked sausages or streaky bacon. Vegetarian sausages also work well. Leftover stuffing of any kind can be used, or swap for ready-made stuffing balls, lightly crumbled. Boursin can be replaced with any light cream cheese, garlic soft cheese, or a spoon of reduced-fat crème fraîche. Reduced-fat cheddar can be swapped for mozzarella, red Leicester, or a festive cheese like brie or camembert (use slightly less if using full-fat). Cranberry sauce can be replaced with redcurrant jelly or a little caramelised onion chutney. The giant Yorkshire puddings can also be baked in a single larger dish and cut in half before filling and rolling.
