Crispy Cajun Fish with Lemon Garlic Butter Drizzle & Chips

This has got to be up there with one of the nicest fish dinners at home. Cod is coated in cajun seasoned breadcrumbs, with a gorgeous lemon infused garlic butter drizzle with homemade chips to keep this dish lighter, although you can use frozen ones to speed this recipe up.

Turn cooking mode on

Step 1

Start by cutting the potato into thin chip shapes. Transfer to a large pan of hot water. Add in the bicarb of soda, and cook for 10 minutes. Remove from heat and leave to steam dry.

Notes

Because fish holds a lot of water, its important for this recipe to pat dry and to give a gentle coating in flour to help the breadcrumbs to adhere. Make sure that the fillet isn't dripping with egg when you come to dipping in the breadcrumbs. When breadcrumbing, gently push the breadcrumbs into the fish, shake off and re dip in the breadcrumbs. If you don't want to boil the chips, you can also microwave them for a few minutes before cooking to help soften the insides. Dip serve - I use light mayo on the side, crack in some black pepper and grate in a little lemon zest with a drop of lemon juice to get a gorgeous dip for the chips to dunk in.
