Chicken & Bacon ‘Carbonara’

I say carbonara as it is loosely based on the recipe by using eggs and cheese as the sauce but authentic by no means. I add chicken for extra protein and use what’s available at the supermarket in the form of bacon and parmesan cheese. I also like adding a spoonful of cream cheese for extra creaminess but this is optional. If you can get hold of it, guanciale and pecorino cheese are what authentic carbonara's use.
