Chicken & Bacon ‘Carbonara’

I say carbonara as it is loosely based on the recipe by using eggs and cheese as the sauce but authentic by no means. I add chicken for extra protein and use what’s available at the supermarket in the form of bacon and parmesan cheese. I also like adding a spoonful of cream cheese for extra creaminess but this is optional. If you can get hold of it, guanciale and pecorino cheese are what authentic carbonara's use. Notes

You need to work quick in this recipe so make sure everything is prepped beforehand. I always add some pasta water to the eggs to temper them, which essentially means slowly bringing them up to a warmer temperature so they don’t scramble when mixed with the hot pasta, helping the sauce stay smooth and creamy. This relies heavily on seasoning with generous amounts of cracked black pepper and salt. Adjust to your taste. Store the leftover egg whites in a clean airtight container and keep in the fridge for up to 4 days! Or you can freeze in an ice cube tray and they keep for up to 12 months.
