Chicken, Stuffing & Gravy Hotpot

This 'hotpot' is comfort in a dish. Tender chicken baked in rich gravy, topped with herby stuffing and thinly sliced golden potatoes, baked and then topped with melted cheese. It can be prepped ahead and even frozen if you want to save on time.

Notes

For this recipe, I used a mandolin to cut super thin slices to use less potato overall, for quicker cooking, and crunchier topping. If you don't have a mandoline to cut super thin slices, you may need extra potato to cover the surface (400-450g). You can pack this out with more veggies if you fancy them such as peas, diced swede, etc.

Another amazing recipe! Another one with the husband’s seal of approval. Served with parsnips and some sprouts (added after). Will be adding this to the rotation ☺️

This tasted really good but some of the potatoes were a bit hard so will probably parboil them quickly first next time x

Glad you enjoyed it, Kelly! Parboiling is a great solution. Make sure the potato slices are even and slightly thinner too, which should also help with even cooking. Would love for you to try it again!

We added more gravy the husband said the wasn’t enough as he also takes it for his pack up for work

Thanks for letting me know, Lindsey! You could up the stock a bit initially or add a cornflour slurry if the consistency becomes too thin. I hope adding more gravy has everyone happily fed and packed!
