This tasted really good but some of the potatoes were a bit hard so will probably parboil them quickly first next time x

Glad you enjoyed it, Kelly! Parboiling is a great solution. Make sure the potato slices are even and slightly thinner too, which should also help with even cooking. Would love for you to try it again!

Went rogue and added in sweetcorn with a side of sprouts. This was DELICIOUS! and got the thumbs up from the hubby too. So glad to have left overs for another day.

We added more gravy the husband said the wasn’t enough as he also takes it for his pack up for work

Thanks for letting me know, Lindsey! You could up the stock a bit initially or add a cornflour slurry if the consistency becomes too thin. I hope adding more gravy has everyone happily fed and packed!
