For this recipe, I used a mandolin to cut super thin slices to use less potato overall, for quicker cooking, and crunchier topping. If you don't have a mandoline to cut super thin slices, you may need extra potato to cover the surface (400-450g). You can pack this out with more veggies if you fancy them such as peas, diced swede, etc.

This tasted really good but some of the potatoes were a bit hard so will probably parboil them quickly first next time x

Glad you enjoyed it, Kelly! Parboiling is a great solution. Make sure the potato slices are even and slightly thinner too, which should also help with even cooking. Would love for you to try it again!
