Notes

Using sausage meat rather than plain mince adds built-in seasoning and fat, which gives the sauce more flavour and richness without needing extra ingredients. If you prefer, you can use chicken or turkey sausages instead, or swap for lean mince just note the sauce may be slightly less rich, so you might want to add a little extra seasoning. The chipotle paste can be adjusted to taste, and you can bulk the sauce out with mushrooms, courgette or spinach stirred in with the peppers. For a creamier finish, a spoon of cream cheese or crème fraîche can be added at the end, loosening with a splash more pasta water if needed.

I had a bit of a mare with this one, my sausage meat just wouldn’t cook! According to chat gpt it was because I used 3% fat sausages. I decided to give up on the frying pan and try the ninja which worked a treat, so we got there in the end!
