Notes

A light spray of oil and salt helps the jackets go extra crisp don’t wrap them in foil. Swap bacon lardons for lean medallions and use Elmea Light for a lower fat version. Add ½ tsp chilli flakes or a dash of hot peri sauce to the pan for more kick. Top with a spoon of Greek yoghurt or a sprinkle of fresh parsley to balance the spice.
