Place the butterflied chicken breasts into a bowl. Add the smoked paprika, garlic granules, salt, black pepper, and peri-peri marinade, then toss well until evenly coated.
Use 1/2 cheese slice on both breasts if you want to save 39 cals per portion. Chicken thighs can be used instead of breast (cook slightly longer). Swap brioche for seeded or wholemeal buns if preferred. The peri yoghurt sauce also works brilliantly as a dip or wrap sauce
