Spicy Vodka Steak Pasta

Bring a large saucepan of salted water to the boil and cook the pasta until al dente. Before draining, reserve some of the pasta water, then drain and set aside.

Notes

Steak: I cooked mine for around 2 minutes per side, but steaks vary in thickness, so adjust the cooking time depending on your steak and how you like it cooked. Resting it while you make the sauce helps keep it juicy especially under some foil!

Vodka: If you prefer not to use alcohol, you can leave it out and add a little extra pasta water instead, although the finished flavour will be slightly different.

Pasta water: Reserve more than you think you'll need before draining the pasta. Use some to rinse out the cream jug, then keep the rest nearby so you can loosen the finished sauce if needed.

Chicken: Chicken breast can be used instead of steak. Dice into bite sized pieces, season with the smoked paprika, garlic granules, salt and black pepper, then pan fry until golden and completely cooked through. Remove from the pan while you make the sauce, then add the chicken back at the end or spoon over the finished pasta.
