Hi Emma, yes, you can meal prep the bacon and omelettes up to 3–4 days ahead! Just reheat them gently and add fresh cream cheese, chilli jam, and rocket while toasting the bagels. Assembling right before eating keeps everything tasty!

I am looking to do this as meal preps for my breakfast in work. Am I best eating it cold? Not sure if the cream cheese will just turn into liquid if I heated it up

I've made these for meal prep breakfast. I added wilted spinach to the egg omelettes and assembled with the bacon and bagel. Just added the cream cheese and chili jam after heating through. Not sure I could eat them cold but to each their own.
